Cowboy stew is a great dish that’s perfect for if you want to have everything in one place. Veggies, meat, and a killer taste is all included in this, and the cool thing about this, is you can let it simmer for hours to create a bang-up texture to this.  It’s a hearty and healthy dish that you can have for the whole family, and it’s something that’s a favorite for a lot of people who are interested in creating a tasty, delectable dish.

You can also save this for leftover, although it’s probably going to be rare that you have some, because this tastes good, and it’s something the provides the best textures you can, and ones that’ll change the game.

Ingredients:

2 pounds ground beef

2 (16 ounce) packages kielbasa sausage, sliced into 1/2 inch pieces

2 cloves garlic, chopped

1 onion, chopped

2 (14.5 ounces) cans peeled and diced tomatoes, drained

4 medium baking potatoes, peeled and diced

2 (15 ounces) cans pinto beans, with liquid

2 (15.2 ounce) cans whole kernel corn, with liquid

1 (14.5 ounces) can diced tomatoes with green chile peppers, with liquid

1 (10 ounces) package frozen mixed vegetables

4 cups of water

2 teaspoons ground cumin

2 teaspoons chili powder

1 pinch salt and pepper to taste

Steps

  1. Get a big skillet and add the oil to it, along with medium-high heat. Put the beef in there, crumbling it over this.
  2. Sauté the garlic, sausage, along with the onion in this, cooking the entire mixture in this until there isn’t any pink left on the meat.
  3. After that, drain the rest of the grease before you put this into a big pot, and make sure everything’s cooked.
  4. Add in the potatoes and the tomatoes to the pot so they’re combined. Then, put the corn, mixed veggies, pinto beans, the diced tomatoes with the chiles intact, and also the water to everything, creating a nice, thick soupy mixture.
  5. After that, season this with chili powder, cumin, pepper, and salt. Make sure it’s seasoned to flavor.
  6. Simmer this on medium-low heat for as long as you want. If you want it to be nice and thick, you can cook it all day! If you’re pressed for time though, make sure you do let it sit on a low simmer for at least an hour.
  7. Serve it!

Tips

Can I put it in the slow cooker?

You can! Some people lie to put it in a slow cooker since it’s better for cooking all day and helps make the meat nice and tender.

If you do that, make sure that everything’s cooked, and watch the liquid in this. Try to let it cook on low for about 6 or so hours for best results if you choose to add this to the slow cooker.  You can also p0ut it on high for a little less time, but it won’t make the meat as tender.

What should I do with leftovers?

Leftovers are definitely a must with this, provided you have some left. For the best results from this, put these in soup containers that are airtight, store this in the fridge, and when it’s time, take it out and heat it up, whether in the microwave, or on the stove.  They’re great any way you want to do this.

How do I make it a bit more spicy?

While some people don’t need the spices, there some of us who want a little bit more. you can add cayenne and red pepper flakes to this to create more a kick for your stew.
