Beef Stew with Carrots & Potatoes

by Danielle

Beef stew is a simple dish, but this one is utterly delicious. In fact, this stew is so savory, that you won’t be able to get enough of it.

It’s something that, once you get a taste for it, you’ll be begging for more, and it’s something that so many people are going to definitely enjoy, especially when they want something nice and hearty for their next dinner meal.

It’s made with simple ingredients, and it’s also one that doesn’t take very long to make either. Plus, you can make the beef whatever type of way, especially if you’re a fan of it being a certain kind of texture and means to really offer the ultimate flavor for you to enjoy.

Ingredients

2 tbsp of olive oil.

2 pounds of cubed beef stew meat.

2 tbsp of all purpose flour.

4 cups of water.

2 cups of beef broth.

½ tsp of salt.

½ tsp of ground black pepper.

4 cups of cubed potatoes.

2 cups of chopped carrots.

1 tsp of dried rosemary.

1 cup of fresh corn kernels.

1 cup of fresh green beans cut into 1” pieces.

1 cup of chopped turnip (optional).

2 cups of chopped fresh tomatoes (optional).

Steps

Get a big pot, heat up the oil in this, and then add in the beef and flour. Cook this until it browns or is cooked to your own personal tastes.

Put the water, the broth and the salt and pepper into this, seasoning it as needed in order to make it taste right.

Boil this, and then, lower the heat, and let it sit to simmer in the broth for about an hour or so.

Once that’s done, add in the veggies, putting everything in there. Add more broth and other liquid as needed, and let it sit to cook for at least another half hour, or a little bit longer until the veggies are cooked.

If you plan to include the turnip and the tomatoes, add it to the mixture now, and from there let it sit there on low for another 20 minutes until everything gets soft.

Give the mixture one final seasoning taste, and adjust it as needed. Serve this immediately as needed.

Tips.

Do I need to use the slow cooker for this?

You can if you want to. This one, if you choose to use the slow cooker, should of course be something that you put the ingredients in, cover the lid, and then let it sit ton low for about 8 hours or so. it will make it a lot more tender.

Do I need to add all the veggies included in this?

You do not. Some people like the addition of more veggies because it’s something that adds to the flavor. But if you don’t like veggies, or don’t like the flavor, then you don’t have to add that, since this is something that can impact the taste of it.

Can I keep it as leftovers?

You can do leftovers with this one, but it’s important to note that leftovers for this should be heated up so that everything else tastes better, and that it offers the correct taste that you want from this. You should make sure it’s heated all the way, since the last thing you want is to have a beef soup that doesn’t taste as hot as it should.

That’s the one problem with this recipe, but usually cooking it longer is the solid solution to this, especially for those curious about how to make this kind of soup.
